Cold-smoked Danish salmon with dill crème fraîche, pickled cucumber, toasted rye crispbread, and lemon oil. Served with watercress salad.

Wild mushroom velvet soup with truffle cream, toasted sourdough croutons, and fresh thyme. Made with chanterelles and porcini foraged in the Danish forests.
